Cox's Orange Pippin "Pippins" are apples that originated from seed stock, not from hybrids. This variety originated in Colnbrook, England, in 1832, as a seedling of a Ribston Pippin. Parent of Ellison's Orange, Holstein, Elstar.Grandparent of Gala. Fruit medium, red and yellow, usually striped, often russeted. Susceptible to scab and canker. Flesh yellow tender, crisp, semi-tart with a very special aftertaste. Excellent quality, all purpose. Highly esteemed as a dessert apple and for cider. Also excellent for all-around processing. Flavour enhanced by ripening off the tree. Harvest from mid- September to mid-October. |

King Also called Tompkins' King and King of Tompkins County Originated in New York 1804. Tree vigourous, spreading and productive. Beautiful large, yellow apple with red stripes and flush. Flesh is crisp, coarse, juicy, with a sweet, subacid, and aromatic flavour. Very fine dessert, sauce, baking, and juice apple. Adds a lot of flavour to juice. Ripens late October. |

Porter Also called Jennings and Yellow Summer Pearmain. Originated in Massachusetts c. 1800. The fruit has pure yellow skin with crimson blush. The flesh is tender, sweet and juicy. Very good dessert, canning and cooking apple. Retains its form with cooking. Harvest in September and October. |

Russet There are several varieties of Russets or "Leathercoats." Modern commercial apple varieties universally feature thin skins, but many of the best tasting apple varieties have rough, potato-like skins. They are called "russets". The russets have been cultivated not for their surface appearance but in spite of it; beneath the rough exterior the flesh is richly flavored often with a spicey quality, and the texture is robust. The texture and flavor of russets is often reminiscent of a pear. |

Yellow Bellflower Also called Summer Bellflower. Originating in New Jersey, 1742. May be the parent of Red Delicious. The tree is medium to large, and susceptible to apple scab. The fruit is quite variable in size, with smooth pale yellow skin with a pinkish blush on the sunny side. The flesh is whitish, firm, fine-grained, rather tender, aromatic, quite acid. Harvest in October. Excellent for storage.Good dessert apple later in season as flavour develops with time.Excellent cooking and cider variety. A favorite for baked apples. |
